Free Thai recipes - Chicken Red Curry

 

Chicken with Cashew Nuts

Remark: Shrimp or Fried bean curd can be substituted for chicken

[Ingredients: 2 servings]

1/2 lb. (225g) Sliced Chicken   

½ cup (unsalted) roasted cashew nuts

1 cup (can) straw mushrooms

1 tablespoon vegetable oil

2 cloves minced garlic

½ onion, sliced

¼ cup sliced red bell pepper

¼ cup chopped green onion

[Sauce:]

1 teaspoon sesame oil

¼ tablespoon white pepper

1 tablespoon tapioca starch

1 tablespoon fish sauce 

2 tablespoons oyster sauce

1 ½ tablespoons sugar

[Garnish:]

3 or 4 roasted dried jalapeno

[Preparation:]

1) Marinade sliced chicken with fish sauce, 

    tapioca starch, white pepper, and sesame

    oil. Place in the fridge for 10 minutes.

2) Heat pan, add oil, garlic, chicken, and all 

    the rest of the sauce ingredients.

 3) Turn heat to high and reduce sauce until

    glaze forms.  Mix in onion, red bell pepper,

    straw mushroom, and garnish with scallion

    and roasted dried jalapeno. This dish is

    usually served with rice.
